Ingredients for the tomato sauce:
- 1 kg San Marzano tomatoes (or canned peeled tomatoes)
- 2 cloves of garlic
- 4 tbsp extra virgin olive oil
- 1 tsp sugar
- A few leaves of fresh basil
- Salt and pepper to taste
Preparation steps:
1. If using fresh tomatoes, dip them in boiling water for a few seconds, then remove the skin. Cut them into pieces and remove the seeds if necessary.
2. Heat the olive oil in a saucepan over low heat. Add the crushed or finely chopped garlic and sauté until golden brown.
3. Add the tomatoes (fresh or canned) and crush them lightly with a wooden spoon.
4. Add sugar to reduce acidity, salt, and pepper.
5. Simmer over low heat for 30 to 40 minutes, stirring regularly to prevent the sauce from sticking.
6. Off the heat, add the fresh basil leaves, torn by hand to preserve their aroma. Adjust the seasoning if necessary.
