Matchao Pizza – the sweet pizza with matcha and strawberry

Steps for preparing matcha paste - - - - -

Phase 1: Preparation and rest time - 22 hours
1. Put 300 ml of water in a large bowl, dissolve the 6 g of fresh yeast in it, then add the 5 g of honey while mixing.
2. Add 300g of flour and mix with a spoon until you obtain a homogeneous mixture.

3. Seal your salad bowl tightly using a suitable lid or a large dish.
4. For fermentation, let your preparation rise in the fridge for 22 hours.

Phase 2: Preparation and rest period - 24 hours
1. Take your mixture out and let it come to room temperature for 1 hour.
2. Once the mixture has warmed up, add the 400 ml of water and mix with a spoon. You can start by mixing with your hands and then finish with a spoon to ensure the mixture is well combined.
3. Gradually incorporate 25g of salt and 700g of flour. Once all the flour has been added, remove the dough from the bowl and knead by hand for 15 minutes until you obtain a smooth dough.
4. Then incorporate 10g of olive oil and the teaspoon of matcha, knead for 10 minutes.
5. Cover the dough with cling film and let it rest for 15 minutes.
6. Oil (olive oil) a large clean bowl and place the prepared ball in it.
7. Allow the mixture to rise for the second fermentation for at least 20 hours in the refrigerator.

Phase 3: Forming the dough balls
1. Take the bowl out of the refrigerator and let it come to room temperature for 1 hour.
2. Once this hour has passed, make 6 balls of 250 g each, but be careful: do not mix them again. Each ball of dough must be rolled in the palm of your hands, making sure to close them well to prevent air from getting inside.
3. Place the dough balls in a floured box, leaving space between them.
4. Let it rise for another 3 hours at room temperature.

1. Prepare the matcha paste
Take your dough and add the matcha. Knead by hand for a few minutes until the powder is well incorporated and the dough has a beautiful, uniform green color.
Spread it thinly on a lightly floured work surface and form a circle.
🔥 Blind baking:
Place the dough in your Preheat ZiiPa pizza oven and cook for 90 seconds, until lightly browned. Set aside.

2. Prepare the matcha cream
In a bowl, whisk the mascarpone and heavy cream until you obtain a smooth and creamy texture.
Next, add the sifted matcha and mix well until you obtain a smooth, bright green and delicious cream.

3. Training
Spread the matcha cream generously over your cooled pastry base.
Cut the strawberries in half and arrange them harmoniously over the entire surface.
Melt the white chocolate (in a double boiler or for 30 seconds in the microwave), then draw a pretty zigzag line over the pizza.
