
Pizza Mirella – peach, burrata and prosciutto pizza

For the Mirella pizza:
- 1 dough ball of 250 g
- 1 head of garlic
- Soft butter
- 2 ripe peaches
- 1 burrata
- Honey
- Prosciutto
- Parsley
- Salt
- Pepper

Phase 1: Roasted Garlic Butter
1. Cut the top off the garlic head to slightly expose the cloves, then place them whole (with the skin on) in an ovenproof dish.
2. Drizzle generously with olive oil, season with salt and pepper, then bake at 180°C in a conventional oven for about 1 hour, until the garlic is tender and melting.
3. Once the garlic heads have cooled slightly, scoop out the flesh using a small spoon or by gently pressing the base.
4. Mash it in a bowl with the softened butter, add the chopped parsley, a little salt and pepper. Mix until you obtain a smooth and fragrant paste.
Phase 2: Roasted peaches
1. Wash the peaches, then cut them into even quarters.
2. Fry them in a buttered pan for 10 minutes, until golden brown. If the peaches aren't very sweet, drizzle with honey 3 minutes before the end of cooking.
Phase 3: Shaping
1. Spread the butter-garlic-parsley mixture over the entire surface, then distribute the mozzarella cubes.
Phase 4: Cooking
1. Bake for 90 seconds at 400°C in your ZiiPa oven, or 12-15 minutes at 250°C in your traditional oven (static heat).
