Frosted lemons

They're fresh, tangy and super-simple to make, even if you're not a pastry chef! With their fun presentation and sparkling taste, these little iced lemons will quickly become your favorite dessert. Ingredients 4 glazed lemons:

  • 4 large untreated yellow lemons (choose firm ones)
  • 120g caster sugar
  • 2 egg whites
  • 150ml water
  • 1 pinch salt

Preparation steps: 
1. Wash the lemons thoroughly. Cut each lemon in half. 
2. Using a spoon or small knife, carefully scoop out the pulp from the lemons, taking care not to pierce the skin. Save the pulp and juice in a bowl.
3. Strain the juice from the pulp to remove seeds and pieces of membrane. You should obtain about 120ml of lemon juice.
4. Mix the sugar and water in a saucepan. Bring to the boil, then simmer for 2-3 minutes, until the sugar has completely dissolved. Remove from heat and leave to cool. 
5. Once the syrup has cooled, add the previously strained lemon juice and mix well. 
6. In a separate bowl, beat the egg whites until stiff with a pinch of salt.
7. Gently fold the egg whites into the lemon mixture, using a spatula to avoid breaking the whites.
8. Pour the lemon mixture into a freezer-safe container and place in the freezer for 1 hour. 
9. After 1 hour, remove the mixture and whisk vigorously to break up any ice crystals. Return to the freezer.
10. Repeat every hour for 3 to 4 hours to obtain a smooth, creamy sorbet texture.
11. When the sorbet is ready, fill one half of each emptied lemon with sorbet. Then replace the other half on top to form the cap.
12. Place the frozen lemons in the freezer for at least 2 hours before serving.

Remove the frozen lemons from the freezer 5 minutes before serving, to prevent them from becoming too hard. Serve chilled and enjoy this refreshing dessert!
