Equipment required:
- ZiiPa Piana pizza oven
- ZiiPa pizza peel

Ingredients for the pizza due:

  • 250g pizza dough
  • 1 tablespoon tomato sauce
  • 1 tablespoon pesto
  • 50g grated or diced mozzarella cheese
  • 1 to 2 slices prosciutto ham
  • A few leaves of rocket
  • Small handful of pine nuts
  • Grated Parmesan cheese
  • A few basil leaves
  • Olive oil
  • Salt and pepper to taste

Preparation steps: 
1. Preheat your Piana pizza oven.
2. On a lightly floured surface, roll out the pizza dough into an oval shape, a little more stretched towards the top, to form a thin, even base.
3. Place a few pieces of mozzarella in the centre of the dough. Fold over the two shorter ends to form a bow tie. Shape the two long ends into two small circles, creating two pizzas in one dough.
4. Topping the first pizza: On one of the pizzas, add a spoonful of tomato sauce. Spread lightly, leaving a little dough around the edges to form the crust. Sprinkle with grated or diced mozzarella.
5. Topping the second pizza: On the other pizza, add a tablespoon of pesto. Sprinkle with grated or diced mozzarella.
6. Place your pizza in the Piana pizza oven for 90 seconds, just in time!
7. Once the pizza is cooked, add pieces of Prosciutto cured ham to the tomato base.
8. On the pesto base, add rocket leaves, a small handful of pine nuts and grated Parmesan.
9. Season with a drizzle of olive oil, salt and pepper.
